What’s a busy mom to do with a hungry family and nothing “pulled out” for dinner?  Well, I don’t like to be in that situation, because it usually leads to eating out.  And that drains the pocketbook FAST.  But, let’s be realistic, shall we?  It’s confession time:  I am not perfect

I’ll wait until the air pressure returns here.

Ok, now that you are over your initial shock, let me show you how I used up some leftovers the other day:

I took some leftover corn spaghetti, some leftover chicken, pasta sauce, and cheese:

And mixed the pasta, chicken, and sauce in a bowl together until well blended.

Poured into a 9×13 pan, top with LOTS of cheese:

And bake at 375 for about 20 minutes…and dinner’s ready!

Spaghetti Bake

2 C. leftover chopped chicken or turkey

2 C leftover cooked pasta (whatever you have on hand)

1-2 C Pasta sauce

2 C shredded cheese

Mix first 3 ingredients well, pour into a 9×13 pan, and top with cheese.  Bake at 375 for 20 minutes until cheese is nice and melted and golden.

What’s your favorite “go to” meal?
